This is a recipe from Sylvia Fountaine "Feasting at Home." It seemed like it would fit the bill for a windy, rainy week like we've been having.
Ingredients: 4 cups cannellini beans (white beans) 1 T olive oil salt and pepper chili flakes 2 T water 2 cups marinara sauce big handful of lacinato kale, chopped 1/4 cup parmesan or pecorino cheese 4-5 slices of fresh mozza or burrata cheese
Directions: Preheat oven to 375 In a 9" ovenproof baking dish add teh white beans, stir with olive oil, salt, pepper and a pinch of chili flakes. Add the marinara sauce and water and mix again. Stir in kale. Sprinkle with parmesan and nestle in the mozza. Bake uncovered for 25-35 minutes until bubbling and golden. This could be served with crusty bread. Keep it vegetarian or add some italian sausage.
