Mediterranean Rice Salad
Serves 2
1 cup rice (your choice brown or white)
1 T olive oil
2 small zucchini
1-2 T water
¼ cup fresh basil chopped
A spring of fresh oregano or 1 tsp dried
4 cups lettuce
2 cups arugula
½ cup sliced green olives
Optional:
½ cup corn
1 sliced avocado
Hard boiled eggs
For extra protein you could add some chick peas, a can of tuna or some chopped chicken.
Or as you can see in the photo my mom (when she made it for us last season) added hard boiled eggs.
Dressing:
1 clove garlic (or 1 stem garlic scapes)
¼ cup olive oil
2 T lemon juice
½ tsp dried marjoram or fresh
2 stems of mint
½ tsp dried thyme or fresh
1 stem fresh tarragon
Salt and pepper
