Kale Chips
I've returned to something I haven't had for a while. You would think that I would hardly need to enter a grocery store these days and that's almost true, except for chips! I love salty treats. This week I was feeling like I should hold off and Kate, my daughter mentioned that she loves kale chips. I know there's some of you that regularly make this but it doesn't often appeal to me (I'm being honest). That said, I had kale chips seasoned with nutritional yeast ready for her and I when she got home from work on Wednesday and we both loved it. And there was not waste involved. I think that's the kicker for me with all the chips I love to eat - all the waste. So, if you're like me and love a salty treat, give this a try.

There's lots of different seasonings you can do but this is what I did. It probably took me 5 minutes in total to prepare it and then about 10 mintues to bake - such a great, simple, no waste snack.
Instructions:
Preheat oven to 350 degrees
Cut the kale off the ribs (stem) and chop into pieces. Place in large bowl.
Drizzle olive oil on top massage in until it's evenly distrubuted.
Lay flat on a baking pan (I put it on parchment paper for easy clean up) and sprinkle with nutrional yeast and garlic salt.
Bake for 10 mintues or until perfectly crispy. Dig right in. I definitely prefer it fresh out of the oven before it takes on any moisture.
Enjoy!
Other toppings to try:
parmesan
smoked paprika
lemon/pepper seasoning
