Chickpea Crepes Stuffed with Greens

½ cup chickpea flour

¼ cup all-purpose flour

1 egg

¾ cup water (or a mix of cream)

1 T olive oil

1 bunch of greens (kale, arugula, swiss chard)

2 cloves of garlic

2 T pine nuts,

2 T raisins

¼ tsp curry powder,

​salt and pepper to taste


1.Mix batter together and let sit for 30 min.


2.In a large skillet heat oil, raisins, garlic, curry powder and pine nuts. Cook till browned and add greens. Cook until just wilted. Add salt and pepper.


3.Make crepes – once cooked, roll each crepe like a cigar with about ½ cup of filling.


Garnish with fresh romano or parmesan cheese if desired.
