Restorative Cabbage Salad

Ingredients for dressing:
1 T Paul's hot sauce
1/3 cup vegetable oil
1 T sesame oil
2 T soy sauce
1/4 cup lime juice
2 T brown sugar
1 T fish sauce
1 tsp grated ginger
salt to taste
Ingredients for salad:
Cabbage (about 5 cups thinly sliced)
2 carrots shredded
6 scallions sliced
3 cups shredded chicken (we used the Central Park Farms chicken breast)
1/3 cup chopped cilantro
1 cup spinach or arugula
1/4 cup chopped peanuts (or almonds, or sunflower seeds)
Garnish with toasted sesame seeds (optional)
Directions:
Whisk together dressing ingredients. In a large bowl add salad ingredients, toss with dressing and garnish with seeds/nuts.
This made a great picnic meal salad and was great for leftovers as the dressing really soaked in nicely.
