Hot German Green Bean Salad – From Simply in Season cookbook
the taste of german potato salad – with green beans!
1½ lbs green beans (cut in 1 inch pieces) steamed until barely tender, save ¼ cup of cooking liquid
3 slices of bacon - fry until crisp, save 2T of drippings from frypan
crumble bacon, set aside
2T sugar
1 T lemon juice or white vinegar
½ tsp salt
1 small onion sliced
Add to bacon drippings along with reserved cooking liquid.
¼ cup cold water and 2tsp cornstarch
Mix together separately, stirring until dissolved. Stir into frypan. Cook until thick and clear, stirring constantly. Add cooked beans and heat through. Sprinkle with bacon and serve.
