Beet Fridge Pickles

2 ½ cups beets


1 cup vinegar


1 cup water


⅓ cup apple cider vinegar


2T sugar


1 ½ tsp salt


½ tsp black pepper


  1.  Scrub beets (there’s no need to peel these babies).  Could halve or quarter beets.


  2. Boil beets until tender and can be easily pierced with a fork.  Set aside to cool.


  3. Combine other ingredients in a small saucepan heating until sugar dissolves.


  4. But beets in jars and cover with brine.


  5. Keep jars on counter for 24 hours and then move to the fridge.  They can hold there for 7+ weeks.
