Palak Paneer

Our favourite way to use an abundance of spinach.


1 onion (chopped)

1 lb paneer (cubed)

4 cloves garlic (chopped)

2 Tbsp grated ginger

2 red chile peppers

(optional)

4 Tsp garam masala

4 Tsp ground cumin

2 Tsp ground coriander

2 Tsp ground tumeric

3 lb spinach (chopped)

1 large tomato (chopped)

3/4 cup any cream

pepper & salt to taste

8 sprigs fresh cilantro

1 cup cashew


1. Heat ghee or oil. Sauté onion until light golden brown

2. While onions are browning, cube paneer and saute until brown. Set aside.

3. When onions are browned, add garlic, ginger, red chilies. Saute 2 minutes.

4. Add garam masala, cumin, coriander, turmeric and saute briefly.

5. Add spinach, cover, and cook down.

6. When spinach is cooked down, add cream, tomatoes, cilantro. Simmer.

7. Blend mixture with hand blender

8. paneer to spinach. Cook for about 10 minutes in medium heat.

9. Garnish with cilantro and cashews

10. Serve with rice and naan.
