1/2 cup slivered almonds
1 cup vegetable oil
1/2 cup honey
1/2 cup vinegar
4 oz silken tofu (soft)
2 T poppy seeds
1.5 tsp dry mustard
1 tsp salt
1 tsp paprika
2 T minced onion
1 bok choi or other greens of your choice
1 apple
1 cup fruit (halved grapes, blueberries, strawberries)
Toast the almonds in a pan, set aside to cool Put all dressing ingredients in a blender and blend until smooth. Add the minced onion and cool until ready to serve. Toss the choi, apple and grapes in a bowl. You could also substitute local strawberries or blueberries. Pour dressing over ingredients and toss. Set aside at room temperature for 15 minutes to let flavours develop. When you're ready to serve, stir in the toasted almonds. Season with salt and pepper.
