Caramelized Onion and Roasted Red Pepper Quiche

¾  cup feta cheese, crumbled or cubed

2 garlic cloves finely chopped

1 cup of carmelized onions

Roasted peppers to line the crust

½ cup parsley finely chopped

½ cup cheddar or monterey jill cheese to top

4 eggs

½ cup heavy cream or half/half

¼ cup milk

Salt and pepper

Chopped arugula, spinach or greens mix (about 1 cup)


  1.  Chop onions and start carmelizing on low for about 15 minutes.  Transfer to pie crust when finished.

  2. Meanwhile, half peppers on baking sheet, brush with oil and roast for 20 minutes or until blistered.  When done, cut into slices and put onto pie crust.

  3. Fill crust with feta, parsley, garlic and greens.

  4. Pour over egg and milk mixture.

  5. Top with salt, pepper and remaining half cup of cheese of your choice.

  6. Bake in oven at 375 for 30 to 40 minutes (until knife comes out clean).



Variations:

* Add some chopped sausage

* instead of roasted red peppers and caramelized onion make it really easy and chop up some sweet onions and tomatoes.  

*instead of feta use goat cheese
