It's cucumber time, we've got long english, field cukes, pickling cukes, silver slicer, lemon cukes and more! It's time to drink cucumber water, dip chips into tzatiki, cucumber sandwiches, fermented dill pickles, coleslaw with cucumbers, gazpacho soup..... Feel refreshed!

Sweet peas, basil and cucumbers: the aroma of summer

It has been wonderful to see so many returning customers and meet folks who have newly moved into the neighbourhood - Welcome. So glad you took time to stop and get veggies. Please know you are always welcome to say hi to the cows and chickens on Tuesdays. Basil and cucumbers are looking beautiful now and ready for summer salads.

Zucchini Appetizer Recipe

3 c. thinly sliced unpeeled zucchini
1 c. flour
1 t. baking powder
½ c. chopped onion
½ c. parmesan cheese
2 T. snipped parsley
½ t. salt
½ t. crushed oregano leaves
Dash of pepper
1/3 c. oil
4 eggs, slightly beaten

Grease 9 x 13 pan. Mix all ingredients. Spread in pan.
Bake at 350 for 25 min. or until golden brown. Cut in small pieces.

Veggies like sun too!

Bring on the summer heat! I am just coming in to take a break from planting and weeding because it's so hot!! Loving it - and so are the veggies. Zucchini's have been waiting for this kind of heat so we may get a few on Tuesday - as well as the first beets and carrots of the season.

Pasta with Lemon Chicken and fresh Vegetables

One of my favourite recipe's is Pasta with Lemon Chicken and Fresh Vegetables. Try this one with, you can substitute vegetables (we have summer turnips, baby carrots, zuchinni that would go beautifully). (I like to add a little mayo into the dish...but that's just me:)
