Beet and Blueberry Waffles. (from Alive magazine)
1 1/3 c. 2% milk or unsweetened coconut beverage
1 c. Chopped cooked beets
2 large eggs
1/2 . Oil
1 t. vanilla extract
1 1/2 c. whole wheat or gluten-free all-purpose flour
2 t. baking powder
1 T. palm sugar
1/4 t. Salt
2 c. blueberries
1/4 c. Chopped mint
Using hand blender, puree milk with beets. Blitz in eggs, followed by oil and vanilla.
In large bowl, stir flour with baking powder, sugar and salt. Pour beet mixture overtop and mix until just combined.
Cook in waffle iron. Toss blue berries with mint, and spoon over cooked waffles. Serve with walnut halves and/or yogurt and honey or the usual maple syrup.
